With most restaurants temporarily closed, and some even permanently closed due to the current situation, it has been hard to find places that offer affordable takeout near me. However, this doesn’t mean that you can’t eat your favorite foods! One of my favorite things to order when I’m out with a big group of people is an antipasto platter for a starter. I love salad, and I love how each restaurant adds different things to it to make their antipasto their own. Although I may not be able to find a local restaurant that is serving antipasto, this didn’t stop me from enjoying one of my favorite platters.
Ingredients
- A bowl of freshly chopped lettuce of your choosing
- 10 pieces of salami
- One red onion
- 10 pieces of capicola ham or prosciutto
- 20 pieces of pepperoni
- 10 pieces of roasted red pepper
- 15 black olives
- One brick of cheddar cheese
- Dressing of your choice
Instructions
- First, slice your pepperoni pieces in half. Then, cut up your ham and salami to be the same size as your pepperoni slices. Slice up your red onion into rings, then cut these rings in half.
- Next, slice you black olives in half and your roasted red peppers into quarters. Chop you cheese into blocks, and add these, along with your meat and onion slices, into the bowl of lettuce. Toss the salad.
- Finally, add the dressing of your choice (I like to do a mix of light Italian dressing and light balsamic vinaigrette dressing). Now, enjoy!
This recipe is very simple to make, and you can swap out any of the meats for others that you prefer, or, if you don’t like cheddar cheese, you can chop up a different kind of cheese to use. Your antipasto can be totally unique to you, which is why it’s so fun to make, and one of my favorite dishes!
