Since my parents are both healthcare workers, they have both been working longer hours due to the pandemic. To help out, I have started cooking meals for my family so they don’t have to worry about making dinner when they end their shift. I’m not a world renowned chef, but I can throw together some simpler meals and recipes. This recipe has all of my favorite foods, is simple to make, and tastes delicious!
Ingredients
- 1 lb of angel hair pasta
- 2 tablespoons of olive oil
- 1 lb medium shrimp, peeled and thawed
- 1 teaspoon of Italian seasoning
- 2 cups of chopped tomatoes
- 1/4 cup of heavy cream
- 3 cloves of minced garlic
- 1/4 cup of Parmesan cheese
- Black pepper
- Kosher salt
- Basil
Instructions
- Boil water in a large pot. Add angel hair pasta and cook until soft. Drain the pasta and set it aside.
- Pour 1 tablespoon of olive oil into a skillet pan over medium heat. Add your shrimp, salt, pepper and Italian seasoning, and cook until the shrimp are cooked through and pink. Empty the skillet and set the shrimp aside.
- Add another tablespoon of olive oil into your skillet pan. Add your garlic, and let it cook for around a minute. Next add your tomatoes and let them cook for about two minutes, while stirring occasionally.
- Turn the temperature down, and add your heavy cream and parmesan cheese. Let this simmer for around two minutes.
- Finally, add your shrimp and angel hair that you set aside earlier. Stir and toss your ingredients until everything is combined. Add basil and extra Parmesan cheese on top for a garnish and serve while hot.
This dish takes less than 30 minutes to cook, and tastes amazing! I got compliments from everyone in my family when I served this for dinner last week. My parents also appreciated that they didn’t have to cook after a long shift at work. Even if your parents aren’t essential workers, they’re still working at home which can be just as exhausting when dealing with distractions and internet issues. Help them out by cooking a meal once in a while to remind them of how much you appreciate them!
