With no school, shopping malls, fitness centers, salons, or any in person social interactions, I often find myself bored and desperately looking for things to do. Thankfully, with grocery stores remaining open, my sweet tooth can still be fulfilled. However, instead of buying a pint of ice cream and calling it a day, in an attempt to cure my boredom, I bought some peanut butter, flour, and some other odds and ends so I could bake these delicious peanut butter cookies.
Ingredients
- 3/4 cups of peanut butter
- 1 3/4 cups of flour
- 1/2 cup of Crisco
- 1 1/4 cups of brown sugar
- 3 tbsp milk
- 1 tbsp vanilla extract
- 1 egg
- 3/4 tsp baking soda
- 3/4 tsp salt
Instructions
- Preheat the oven to 375 degrees. Combine your peanut butter, shortening, milk, brown sugar and vanilla in a bowl. Blend the ingredients with an electric mixer until well blended. Then, add your egg, and blend.
- Add your flour, baking soda and salt to the mixture, and mix until blended.
- Next, take small amount of dough and roll it into rounded droplets. Place each droplet on a cookie sheet, around 2 inches apart from each other. Flatten each cookie slightly with a fork in a crisscross pattern.
- Bake cookies for 7-8 minutes, and then let them cool for 2 minutes.
Now that you’ve cured your boredom, cure your hunger by enjoying some of your peanut butter cookies!
