Southwestern Chicken Roll-Ups

During this mandated quarantine, several people are experiencing stressful days filled with zoom meetings with professors, conference calls with coworkers, learning and working from home, and being a teacher for your kids. The last thing we want to do at the end of our day is add to our stress by making a complicated and time consuming meal. To make things easier, here is a different, but easy to make, recipe to try during quarantine.

Ingredients

  • 6 skinless, boneless chicken breast halves
  • 6 tablespoons of cream cheese
  • 6 tablespoons of fresh salsa
  • 6 tablespoons of Italian-seasoned breadcrumbs
  • 12 toothpicks
  • Cooking spray

Instructions

  1. Preheat oven to 350 degrees. Find a baking sheet to use, and spray it with your cooking spray.
  2. Pound each chicken breast with a meat mallet until they are 1/4 inch thick.
  3. Next, add 1 tablespoon of fresh salsa and 1 tablespoon of cream cheese onto each chicken breast. Then roll each chicken breast from the narrow end, jelly roll style. Secure each chicken roll up with two toothpicks.
  4. Take each chicken breast and dunk it in breadcrumbs. Place the chicken roll ups on the baking sheet, and bake them for 20-30 minutes.

Now that you’ve finished making your stress-free dinner, gather whoever you’re quarantined with, and share your delicious meal with them. Don’t forget to take those toothpicks out before you cut into and eat your roll-up!
